Make Ahead Chicken Crockpot Dinners (makes 8 meals, $3 cost per meal)

Our Make-Ahead Freezer Crockpot Meals posts have been shared over 500,000 times, so I thought I’d add to the GREATNESS and write more recipes! These make-ahead meals are easy to make, inexpensive to buy, delicious to taste, and perfect for busy families to make at the beginning of the week and eat during the week. Each meal feeds a family of 4-6 depending on what sides you have with the meal, as well as how much your family eats. For special tips and hints, see my other make-ahead freezer meals posts!

Make Ahead and Freeze Crockpot Mrals


Island Chicken

(makes 2 meals)


6 skinless chicken breasts
3 T of lemon juice
Zest of 1 lemon
2 cloves of garlic diced
2 t of dried oregano
2½ t of soy sauce
1/2 c of vegetable oil
1/2 c of chicken stock
1 20-oz can pineapples (drained)
salt and pepper to taste


Mix all the ingredients into 2 ziploc bags. Freeze. When ready to cook, thaw overnight, and cook on high for 4-5 hours.



Cheesy Chicken and Rice

(divide into 2 bags, makes 2 meals per bag)


4-5 boneless skinless chicken breasts
1 large onion, chopped
2 cups cheddar cheese
1 large green pepper, chopped
1 – 10.5 ounce can cream of chicken soup (regular or fat free)
1 -15 ounce can whole kernel corn, drained
*Need the day of cooking: 2 Knorr Rice Sides “Creamy Chicken”, cooked according to directions



Cook on low 7-8 hours or on high 3-4 hours. A few minutes before serving, add in
cooked rice, and cheese. Add water or Chicken Broth to thin out. Stir to combine.



Honey Sesame Chicken

(makes 1 meal)


1 lb chicken tenders
3 T olive oil
1 cup honey
2 T sesame seeds
1/2 cup soy sauce
1 tablespoon sesame oil
1 t. salt
1 t. pepper


Place all ingredients in freezer bag, toss to coat and freeze. When ready, place in crockpot and cook on low for 4-5 hours. Remove chicken & shred, then return to sauce. Serve over hot cooked rice.



Crockpot Chicken Fajitas

(makes 1 meal)


6 Chicken Tenders (or 1 lb. Chicken Breast)
1 medium onion sliced
1 medium green pepper sliced
2 cups of salsa
1 can of green chiles
1 package of fajita seasoning (old el paso)
2 T. olive oil


Place all items in freezer bag. Toss and freeze flat. When ready to cook place all ingredients in crockpot and cook for 6 hours on low or 4 hours on high. Remove chicken from mix, shred and then add back into the mix. Serve with warm tortillas and top with salsa, guacamole, shredded lettuce, sour cream and shredded cheese.
