MOUTH WATERING PORK CARNITAS!

I absolutely without a doubt love Mexican food!  to find a healthy recipe is even more amazing!  Happy Sunday to all of you and I hope it is finding you blessed!

Here is a shard recipe from my friend Holli.  I wanted to share a little bit about her because I think she is such an amazing example of what being healthy is truly about.  Busy mom of two incredible kids, she still finds time each day to work out and cook delicious meals.  Holli, you are such a blessing to me!!!!

Pork Carnitas

1 (6-8 pound) pork butt, also called pork shoulder

2 tablespoons coarse salt

1 tablespoon cumin

1 tablespoon freshly ground black pepper

1 tablespoon dried oregano

2 teaspoons ground cinnamon

1 teaspoon cayenne pepper, or to taste

8 whole cloves garlic, smashed

4 chipotle peppers (canned or dried)

1 cup organic tomato sauce

1 cup orange juice

Place everything in a Crockpot on low for 6 hours or high for approximately 4+ hours.

Once cooked, shred with a fork and put back into the crock pot.  Mix well.  Serve in large romaine lettuce leaves.  Enjoy!
