Very Cherry Strawberry Meringue Cookies


My mother in law had a great post on her site where she made a delicious dessert (recipe here) using meringues, strawberries, vanilla ice cream and pistachio paste and it looked absolutely amazing! Since I live about a thousand miles away from her, yet still craved the deliciousness of her dessert, I decided to try making the meringue cookies myself. I chose strawberry cherry flavor because I purchased some cherry extract not too long ago and I love it so much and am always looking for ways to use it up. Call me silly, but I also zested (yes, zested) two strawberries and added it to my batter to make it strawberry flavored too! Next time I’m going to try drizzling them in chocolate when they’re finished. Here’s my recipe:

Very Cherry Strawberry Meringue Cookies


Prep time: 15 minutes

Cook time: 1.5 hours (including cooling time)

Yield: 3 dozen cookies


3 egg whites

1/4 tsp Cream of Tartar

1/4 tsp Cherry Extract (or lemon extract would taste good too if you have it)

1 cup powdered sugar

1 drop red food coloring (optional)



Line a baking sheet with parchment paper and preheat oven to 200 degrees.

Combine egg whites, cream of tartar and cherry extract in a bowl.

Using an electric mixer, beat on medium speed until frothy, then add powdered sugar slowly while beating on low speed.

Once the powdered sugar is mixed in, add food coloring and return the beater to medium speed, and beat until your batter is shiny and THICK (thick enough that the batter is stiff and stands up on its own when you pull the mixer out).

Pour your mix into a large Ziploc bag and cut a 1cm hole in one tip (or you can use a frosting bag). Squeeze batter onto baking sheet into spiral shapes (or whatever shape you desire) and place into oven.

Bake for 1 hour, then turn oven off and let them dry for 30 minutes. You’ll know they’re done when you can easily remove a cookie from the baking sheet without it sticking to the parchment paper.

Serve with vanilla ice cream and sliced strawberries. Should taste like the marshmallows in Lucky Charms cereal. Yummmmmmm!
